For over 60 years, La Cave de Genève’s expertise has centred on the production of sparkling wine, such as the Baccarat Brut Blanc de Blancs, which has won a gold medal four years running (2022, 2023, 2024, 2025) at the International Competition for the World’s Best Sparkling Wines.
With a total of 210 vats, ranging in capacity from 1,250 to 98,000 litres, La Cave de Genève has a storage capacity of 4.5 million litres.
With 77 computer-controlled temperature-regulated stainless steel tanks and a bottling system designed for sparkling wines, we can guarantee optimal production for our prestigious wines or for contract bottling.

CONTRACT BOTTLING

PRODUCTION OF SPARKLING WINES IN SEALED TANKS
The sparkling wine produced using the Charmat method.
We produce sparkling wines in closed tanks using bespoke blends, designed to offer finesse, balance and consistency. Thanks to our selection of white and rosé wines vinified specifically for this method, we tailor each recipe to your brand’s objectives.
Minimum order: 30 hl
You may use your own wine, povided it meets the quality and stability criteria.
Available in 75 cl bottles.
We supply the bottle, the stopper and the wire cage.
Labels, cartons and capsare supplied by the customer in accordance with our technical specifications.
PRODUCTION OF CARBONATED SPARKLING WINES
Carbonation enables us to produce fresh, approachable sparkling wines, whilst offering great flexibility in production. We create bespoke blends or work with your own wine to develop a product perfectly suited to your market positioning.

You may use your own wine, povided it meets the quality and stability criteria.
Available in 75 cl bottles.

PRODUCTION OF STILL WINES

We support brands in creating bespoke still wines, from the selection of blends right through to bottling. Each project is tailored to your brand identity, your market and your flavour objectives.
A wide selection of white, rosé and red wines is available.

You can choose between a cork stopper or a screw cap.

CLOSED TANKS
The production of some of our Baccarat wines, notably the Brut Blanc de Blancs, the Brut Rosé and the Bio Bourgeon ‘reconversion’, requires the use of specialised temperature-controlled stainless steel tanks. With capacities ranging from 5,000 to 20,000 litres, these tanks are designed to withstand a pressure of 10 bar.
WHITE AND ROSÉ WINE CELLARS
ET ROSÉS
To carry out the fermentation of its white and rosé wines, La Cave de Genève has a large fleet of vats. For winemaking and cooling, 77 of these are temperature-controlled.
Temperature control is essential for regulating the temperature of wine during fermentation and helps, amongst other things, to refine its structure and aromatic profile. It is also necessary for the cooling process (tartaric stability). The capacity of these tanks ranges from 1,250 litres to 50,600 litres..
RED WINE VINIFICATION TANKS
In September 2012, La Cave de Genève unveiled its new red wine vats, which incorporate the very latest technological advances. The 10 old steel vats (18,000 litres) have been replaced by 14 temperature-controlled stainless steel vats: 7 truncated-cone-shaped vats of 19,000 litres and 7 cylindrical vats of 22,000 litres. These 14 vats are divided into two blocks of seven.
Each block is 10 metres high and weighs over 3 tonnes. All these vats are temperature-controlled and fitted with a pump specifically for pumping over.
BARREL CELLAR
Ageing wine in barrels requires very careful oenological monitoring and a great deal of work when it comes to filling, racking and cleaning the barrels. With a capacity of over 450 barrels, La Cave de Genève has one of the largest barrel cellars in Switzerland.
This fully air-conditioned cellar features an automatically adjusted humidity level to prevent excessive evaporation of the wine. An ingenious storage system optimises vertical storage space and minimises the need for handling. The barrels are generally used for 3 or 4 years.
OAK BARRELS
The oenologists at La Cave de Genève select French oak barrels, renowned for the quality of their wood, their craftsmanship and their aromatic finesse. These choices are guided by the coopers’ expertise and the suitability of the barrel type to the profile of the wine to be produced. The ageing process lasts on average between 10 and 12 months.
As well as imparting woody aromas that complement those of the grape variety in question, barrel ageing allows for micro-oxygenation of the wine, which helps to stabilise its colour and gives the tannins greater roundness.
