Philippe Chevrier Assemblage Rouge is a beautiful garnet-red color with hints of carmine. Woody and red fruit notes emerge on the nose. After letting it air out to develop all the finesse of its 12-month aging in oak barrels, you’ll smell aromas of precious wood, tobacco and balsamic. On the palate, the sensations are similar but not identical: raspberry with alcohol, menthol, black cherry and mellow oak.
A little tip: the grape varieties and ageing of Philippe Chevrier Assemblage Rouge give it the perfect characteristics to enhance your grilled or braised red meats.

Vinification
Gravity-fed cold harvest. Traditional vinification followed by an ageing period in oak barrels. Vatting with reasoned punching down. Gently pressed. 10 months ageing in French oak barrels. Coarse filtration before bottling.
Eye
Deep garnet-red with carmine tints.
Mouth
Supple and bold attack. Full-bodied mid-palate supported by firm tannins. Aromas of raspberry in alcohol, menthol and black cherry. Mellow woodiness, Powerful and fresh finish. Great aromatic persistance with notes of gingerbread.
Nose
Sustained intensity. Woody notes of coconut, vanilla and red fruits (strawberry). On opening, aromas of precious woods, tobacco and balsamic. Well-integrated oak. Complex, delicate nose.
